                                       FRESH STRAWBERRY PIE


        

PIE CRUST

    1 cup plus 2 Tbsp all-purpose flour

    1/2 tsp salt

    7-8 Tbsp shortening

    2 Tbsp plus 1 tsp water                                        

   

    Mix flour and salt.  Cut in shortening. 

    Sprinkle with water and form into ball.

    Roll out and place in 9-inch pie plate.

    Prick dough on sides and bottom with

    fork to prevent shrinkage while baking. 

    Bake at 450 degrees for 12-15 min.  or

    until golden brown.

 

GLAZE

    1 cup crushed strawberries

    1 Tbsp lemon juice

    1 Tbsp corn starch

    1/2 cup sugar

    1 qt. fresh strawberries

 

    Combine first four ingredients and cook over low heat until thick and clear.

    Cool.  Combine glaze with fresh berries and pile into cooled pie shell. 

    Garnish with whipped cream or non dairy whip.  (The pie pictured is

    garnished with Strawberry Cool Whip.
